Banana bread honey topping and honeycomb chunks

Do you also love to go out, but can you also enjoy a 'Sunday Bake Day' at home? We get you! You want to make this banana bread honey topping recipe on such a day, because sweet lord; we can't get enough of this! The combination of banana bread, cream cheese and the crunchy honeycomb: we. just. love. it.

Double karma points: check!

Besides that this bananabread honey topping recipe will satisfy all your 'sweet cravings', you are also being doubly sustainable. To start with, our banana breads are of course made from saved bananas, with which we fight against the sh*t load of food waste. But did you know that honey is also very sustainable? It is a by-product (literally and figuratively) of the fertilization process of vegetables and fruit; an essential process for the products you buy in the supermarket. And without those smart bees, this sweet stuff would not exist. So while you are eating this, you are doing so well that you can treat yourself to that extra slice, you know. Blame this one on us.

1 SUNT banana bread

100 g cream cheese (at room temperature)

30 g butter (at room temperature)

65 g honey (preferably organic)

25 g icing sugar

100 g granulated sugar

5 g baking soda

Optional: white chocolate (see tip!)

Line a baking sheet or oven dish with baking paper and set aside.

Place the sugar together with 25 grams of honey in a saucepan and stir.
Heat this mixture until it starts to boil and stop stirring.
When the mixture is amber in color (about 2-4 minutes after boiling), remove from heat and quickly whisk in the baking soda (if you have a candy thermometer you can use a temperature of 150 degrees). Watch your hands because this mixture will form a lot of bubbles and is hot!
Pour the hot mixture onto the lined baking sheet and allow to harden.
In the meantime, beat the cream cheese and butter until smooth and fluffy.
Add the powdered sugar and remaining honey and mix until smooth.
Cut the banana bread in half horizontally and spread half of the topping on the bottom half.
